Actually there aren't three specific colors for the background. If you uncheck the "Automatic lights" check box you can manually choose an appropriate (sp?) fade for the background with left and right arrow keys while the Aquarium is running.

This was possible before 1.1 too, but the new thing is the deep blue between the black and the regular cyan tone...
